  • 5+ years as a Head Chef or Senior Sous Chef specializing in Japanese cuisine.

Core Responsibilities

  • Menu Innovation & Curation: Design and execute an authentic Japanese menu, including seasonal specialties and modern interpretations.
  • Quality Assurance: Maintain the highest standards for food quality, presentation, and consistency.
  • Kitchen Management: Oversee daily operations, including inventory, ordering authentic Japanese ingredients, and cost control.
  • Team Leadership: Hire, train, and mentor kitchen staff in traditional techniques and discipline.
  • Compliance: Enforce strict hygiene, HACCP, and food safety standards according to local regulations.

Job Requirements

Required Qualifications & Skills

  • Proven Experience: Minimum 5 years in a Japanese kitchen leadership role.
  • Technical Mastery: Deep knowledge of sushi, sashimi, tempura, and Kaiseki presentation.
  • Cultural Ambassadorship: Ability to engage with guests and provide insights into Japanese culinary culture.
  • Operational Skills: Proficient in kitchen budgeting, waste management, and supplier relations.
