Job Description

 As a Chef de Partie (CDP) at Universal Bakehouse, you will be responsible for leading and managing a specific section in the kitchen, ensuring high-quality production of sourdough, viennoiserie, and other baked goods. You will play a key role in maintaining kitchen standards, overseeing production efficiency, and supporting the team in daily operations.

Key Responsibilities:

  • Supervise and manage daily production operations, ensuring high-quality standards in pastry, bread, and viennoiserie.
     
  • Oversee inventory management, including stock control, ordering, and supplier coordination.
     
  • Ensure quality control for both new SKUs and existing products through daily checks.
     
  • Lead and moderate pre-service and post-mortem meetings to improve workflow and quality.
     
  • Manage and oversee bulk/catering orders, ensuring timely and efficient production.
     
  • Track and report production incidents, wastage, and workflow issues to the Production Manager.
     
  • Facilitate and oversee the training and skill development of team members, ensuring competency in new SKU production.
     
  • Ensure timely production that aligns with daily production schedules and operational needs.
     
  • Oversee the weekly deep-cleaning of production sections, maintaining hygiene and food safety standards.
     
  • Serve as a role model to inspire teamwork, discipline, and professional kitchen conduct

Job Requirements

  • Local Malaysians preferred.
     
  • Works on a rotational shift, including weekends and public holidays.
     
  • Minimum 2-3 years of experience in a similar role within a bakery or pastry kitchen.
     
  • Strong understanding of bread fermentation, sourdough techniques, and viennoiserie production.
     
  • Experience with inventory control and supplier coordination is a plus.
     
  • Ability to lead and train junior team members effectively.
     
  • Strong attention to detail and ability to maintain high quality control standards.
     
  • Passion for baking and a strong work ethic in a fast-paced environment.
     
  • Knowledge of food safety and hygiene standards.
     
  • Ability to handle bulk orders and production pressure efficiently.
