Che Fico Menlo Park is a contemporary Italian restaurant from the acclaimed Che Fico restaurant group, bringing the bold flavors and vibrant spirit of California-Italian cuisine to the heart of Menlo Park.

Building on the success of the original San Francisco concept, the restaurant showcases house-made pastas, wood-fired pizzas, sustainably sourced meats and seafood, seasonal California produce, and an extensive Italian wine and cocktail program. Known for its energetic atmosphere, ingredient-driven cooking, and commitment to exceptional hospitality.

Training Plan:

  • Orientation (0,5 month): You will receive an orientation to the company and local community which includes learning about our company’s customers, culture, business strategies, etc.; learn about payroll schedules and payroll tax withholding; local training area, housing options, apartment complexes, and transportation options; meet key contacts and other employees; receive computer training on company systems; receive an orientation to the local community including cultural centers, volunteer opportunities, local sporting events, and entertainment venues. Orientation is scheduled to take up to one month and takes place concurrently with the first phase of training.
  • Garde Manger Demi Chef (3,5 months): You will learn to prepare and coordinate the production of cold food items to maintain high standards of quality; learn American contemporary styles of presenting food and preparation of buffets; learn to prepare all cold food items for buffet, banquet, and restaurant use according to standard recipes, visually inspect the appearance of all cold food for proper color combination and overall presentation to maintain appeal; prepare requisitions for supplies and food items for production in work stations; check and control proper storage of all food items in refrigerators and freezers to maintain product freshness.
  • Hotline/Pasta Demi Chef (6 months): You will learn the responsibilities of working the Hotline, Pasta, and Antipasti stations while gaining an understanding of kitchen coordination and high-volume service execution. The participant will learn the process of preparing hand-made dough for various pastas such as penne, cavatelli, rigatoni, linguine, agnolotti, pizza, and spaghetti, as well as preparing seasonal fillings and sauces using fresh ingredients. Training will also include the preparation and presentation of traditional antipasti, including cured meats, cheeses, marinated vegetables, salads, and other cold and hot appetizers, with an emphasis on flavor balance, presentation, and proper portioning. The participant will apply cooking techniques such as boiling, baking, sautéing, roasting, grilling, braising, and poaching while maintaining quality and consistency during service. Additional skills to be learned include advanced knife skills, station setup and organization, simultaneous preparation of vegetables, starches, proteins, and appetizers, plating and presentation standards, requisitioning supplies, and proper storage and handling of food items to maintain freshness and food safety standards.
  • Hotline Chef de Partie (2 months): You will learn to coordinate work assignments to ensure station is prepared for service; review assignments of cooks and make adjustments; evaluate, coach, counsel and provide leadership support; monitor and supervise set up of station to ensure that it is up to standard; assist with preparation of products such as savory items, entrees; product tasting, station organization, small sauce production, protein cookery such as braising, roasting, sauteing, broiling, grilling; simultaneous preparation of several portions of vegetables, starches, and proteins; learn plate presentation techniques and evaluation of the results.

Job Requirements

  • You have a hospitality or culinary degree from a post-secondary academic education with a minimum 2-year full-time course, approved by the Ministry of Education
  • Recent relevant work experience in the (ultra) luxury hotel or restaurant industry
