Job Description

Via Aurelia is a neighborhood-driven restaurant located in San Francisco’s Cow Hollow district, inspired by the warmth and hospitality of Italy’s Ligurian coast. Created by acclaimed Bay Area restaurateur Chef Mourad Lahlou, the concept blends Italian Riviera traditions with Northern California seasonality, offering a menu centered on handmade pastas, wood-fired cooking, and thoughtfully sourced seafood and produce.

The dining experience reflects a commitment to elevated yet approachable service, balancing polished technique with genuine hospitality. The beverage program highlights Italian wines, coastal-inspired cocktails, and aperitivo culture, reinforcing the restaurant’s sense of place.

Training Plan:

  • Orientation/Onboarding (0,5 month): You will receive an orientation to the company and local community which includes learning about our company’s customers, culture, business strategies, etc.; learn about payroll schedules and payroll tax withholding; local training area, housing options, apartment complexes, and transportation options; meet key contacts and other employees; receive computer training on company systems; receive an orientation to the local community including cultural centers, volunteer opportunities, local sporting events, and entertainment venues. Orientation is scheduled to take up to one month and takes place concurrently with the first phase of training.
  • Assistant Restaurant Manager, Operations - Skills Acquisition (2,5 months): You will learn to assist with operational functions of the restaurant consistent with the department’s strategic plan and vision for the division and the company; learn to foster a work environment that promotes teamwork; learn to provide performance feedback, recognition, mutual respect and employee satisfaction; learn compliance requirements with company policies, legal requirements and collective bargaining agreements; learn to manage and monitor product quality and guest satisfaction in restaurant; learn to provide guidance for improvement and implement necessary adjustments; assist with guest complaints handling. This is a functional program and not departmentally based. As such, this skills acquisition phase may run concurrently with other skills acquisition phases.
  • Assistant Restaurant Manager, Management - Skills Acquisition (3 months): You will learn to manage daily operations of the restaurants; monitor and supervise set up to ensure that it is up to standard; learn to control flow of room by seating guests in each section by rotation; learn to assign and supervise all opening and/or closing side duties; assist with scheduling all team members; learn to conduct pre-meal meetings; learn to participate in ongoing training of employees to ensure that employees continue to improve their performance; learn to coach and counsel team members; learn to set performance goals and hold team members accountable. This is a functional program and not departmentally based. As such, this skills acquisition phase may run concurrently with other skills acquisition phases.
  • Assistant Restaurant Manager, Financials - Skills Acquisition (3 months): You will learn financial management concepts of restaurant management; learn to monitor and control of the labor and food costs; learn to assist with daily and weekly forecasting; learn process for scheduling and staffing, payroll procedures, gratuity distribution methods, revenue reporting; learn cost control methods; learn to make decisions that drive profits; assist in preparing financial reports; schedule staff so that proper coverage is maintained while keeping payroll costs in line; learn to understand the revenue and expense tracking to ensure reporting accuracy. This is a functional program and not departmentally based. As such, this skills acquisition phase may run concurrently with other skills acquisition phases.
  • Assistant Restaurant Manager - Skills Implementation (9 months): You will implement and build upon the skills acquired during the previous Skills Acquisition phases. This includes leading and mentoring, improving organizational efficiency, time management, planning and organization, generating revenue, cost control, decision making while providing excellent customer service. This phase will constitute the majority of the program length, allowing MITs to apply and integrate the skills acquired in the previous phases. This is a functional program and not departmentally based. As such, this skills acquisition phase may run concurrently with other skills acquisition phases.

Job Requirements

  • You have a hospitality degree from a post-secondary academic education with a minimum 2-year full-time course, approved by the Ministry of Education
  • Recent relevant work experience in the (ultra) luxury hotel industry or fine dining restaurants

  • You have 5 years of recent relevant work experience in the (ultra) luxury hotel industry
  • You have shown consistent career growth over the last years and you have shown serious commitment to your most recent employers
