Senior Baker (Artisan Pastries & Sourdough)

Wangsa Group is seeking a skilled and passionate Senior Baker to lead our artisanal baking operations. As we rapidly expand our F&B footprint across Kuala Lumpur, we are looking for a master of dough and lamination to help us deliver world-class breads and pastries to our growing community.
If you have a deep respect for fermentation, a "golden touch" for croissants, and the leadership skills to manage a high-output kitchen, we want to hear from you.
The Role:
- Artisanal Production: Lead the daily production of premium viennoiserie, including Croissants, Pain Au Chocolat, and savory pastries like Ham & Cheese danishes.
- Sourdough & Specialty Breads: Oversee the fermentation and baking of high-quality sourdough, focaccia, bagels, and other specialty loaves.
- Quality Control: Ensure every item leaving the oven meets our high standards for texture, crumb, and aesthetic appeal.
- Innovation: Collaborate with the management team to develop new seasonal recipes and improve existing product lines.
- Kitchen Management: Manage inventory, ingredient sourcing (flour, butter, yeast), and maintain strict food safety and hygiene standards.
- Team Leadership: Mentor and train junior bakers to ensure consistency across shifts.
What We’re Looking For:
- Proven Expertise: Minimum 3–5 years of experience in professional baking, specifically with lamination (pastries) and long-fermentation breads (sourdough).
- Technical Mastery: Deep understanding of dough temperatures, hydration levels, and proofing environments.
- Consistency: A "perfectionist" mindset—you understand that the 100th croissant must be just as perfect as the first.
- Leadership: Strong communication skills and the ability to manage production schedules in a high-volume environment.
- Passion: A genuine love for the craft and a desire to stay updated on global baking trends.
