This role involves fermentation monitoring, yeast management, and CIP of vessels and lines while ensuring hygiene, safety, and COM compliance. It also supports brewing operations (BH2/BH3), including material intake, malt/rice transfers, and BOTEC/SCADA-controlled processes. Additional responsibilities include ordering cellar materials and conducting self-audits for continuous improvement.
Responsibilites
<ul>
<li>Brewing process (BH3 or BH2) including material intake, material transfer, brewing operation (BOTEC and SCADA), additives addition, CIP of brewing vessels and process lines.( in support with the Senior Executive when necessary)</li>
<li>Daily temperature recording and fermentation plato analysis </li>
<li>Fermentation record with yeast management</li>
<li>Plato, BU, color, VDK, alcohol</li>
<li>Deviation escalation and corrective &amp; preventive action</li>
<li>Assist in wort cooling, wort sampling, and blending of recovered beer.</li>
<li>Ordering of additives, raw material for Cellar operation.</li>
<li>Yeast storage tanks, yeast line cleaning (auto program) with manual connection</li>
<li>Yeast pitching operation during wort cooling.</li>
<li>Ensure hygiene condition achieved in allocated zone </li>
<li>Ensure safety guidelines and policies are adhered to when operating the plant.</li>
<li>Comply to the COM guidelines and contribute consistently in Excellence journey </li>
<li>Ensure COM compliance and able to conduct self audit based on COM</li>
